INGREDIENTS

  • 2 cups of fresh strawberries
  • 1 ½ cups of all-purpose flour
  • ½ cup of sugar
  • ½ cup of cold butter
  • ⅓ cup of sugar
  • 2 teaspoons of cornstarch
  • 1 teaspoon of vanilla essence
  • 1 tablespoon of almond flakes
  • ¼ teaspoon of salt
  • 1 beaten egg
  • ½ teaspoon of baking powder

METHOD

  1. Preheat your oven to 180 degrees Celsius.
  2. Line the bottom of an 8×8 dish with parchment paper.
  3. In a medium bowl, combine the flour, ½ cup of white sugar, baking powder, and salt.
  4. Using a fork, cut the cold butter into the flour mixture. Work the dough until the butter pieces become very small. The dough will have a crumbly texture. Alternatively, you can use a food processor to achieve the desired crumb consistency.
  5. In a separate measuring cup or small bowl, mix the beaten egg and vanilla essence. Add this mixture to the flour mixture and combine until crumbly.
  6. Take half of the dough and press it evenly into the bottom of the prepared dish.
  7. In another bowl, combine the strawberries with 1/3 cup of sugar and cornstarch. Mix well.
  8. Distribute the strawberry mixture evenly over the bottom crust.
  9. Crumble the remaining dough mixture over the strawberries.
  10. Bake in the preheated oven for approximately 45 minutes or until the top turns lightly brown.
  11. Allow the bars to cool completely before cutting them into squares. It is recommended to refrigerate them until ready to serve.
