INGREDIENTS
- 2 tablespoons Olive Oil
- 250g Chicken Livers
- 1/2 Onion, finely diced
- 3 Cloves Of Garlic, minced
- 1 Green Chilli, finely chopped
- Salt and Pepper to taste
- 1 teaspoon Chilli Powder
- 1 teaspoon Dried Thyme
- 1 teaspoon Ground Coriander
- 1 teaspoon Tomato Paste
- 50-75ml Peri Peri Sauce (adjust to your spice preference)
- 75ml Fresh Cream
- 175ml Water
- 1/2 teaspoon Smoked Chili Flakes
- Fresh Coriander, for garnish
METHOD
- Begin by thoroughly washing the chicken livers and set them aside.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the diced onions, minced garlic, and chopped green chilli until the onions turn translucent. Once done, remove half of this mixture from the pan and set it aside.
- Add the washed chicken livers to the remaining onion mixture in the pan. Cook the livers on medium to high heat for 2-3 minutes, until they develop some color.
- Season the livers with salt and pepper, ensuring they are well coated with the spices.
- Sprinkle the chilli powder over the livers and continue sautéing until they are cooked through. Once cooked, remove the livers from the pan and set them aside.
- In the same pan, add the remaining tablespoon of olive oil to the sautéed onions, garlic, and chilli that were set aside earlier.
- Stir in the dried thyme and tomato paste, and mix well. Add a little water to the mixture to help it thicken up and create the base for the creamy sauce.
- Now, lower the heat and pour in the peri peri sauce. Stir the sauce until it is well combined and aromatic.
- Sprinkle the smoked chili flakes into the sauce and gently pour in the fresh cream. Stir everything together.
- Toss in some fresh coriander and let the sauce simmer on low heat, allowing the flavors to meld together beautifully.
- Carefully place the seasoned chicken livers into the peri peri cream sauce, making sure they are fully coated. Allow them to simmer in the creamy goodness for a couple of minutes.
- Once ready to serve, garnish the dish with more fresh coriander and a delightful drizzle of cream.
