I love tacos and I prefer making making mini tortillas when we have tacos. This Is my simple and easy recipe of how I make my mini tortillas.
MAKES 6
INGREDIENTS
- 1 cup of flour
- 1/2 teaspoon of salt
- 1 teaspoon of baking powder
- 1 tablespoon of oil
- 1/2 cup of hot water
METHOD
- Combine all the dry ingredients in a bowl.
- Add the olive oil and mix until the mixture resembles breadcrumbs.
- Gradually add the hot water and stir until a dough forms.
- Knead the dough for 3-4 minutes until it’s smooth.
- Cover the dough and let it rest for an hour.
- After resting, place the dough on a floured surface and divide it into 6 equal pieces.
- Roll each piece into a small ball, then flatten it into a disc shape for easier rolling.
- On the floured surface, roll out the flattened dough into round tortillas.
- Heat a pan over medium to high heat, and when it’s hot, transfer a tortilla onto it.
- Cook until you see bubbles forming, then flip it over and repeat until the tortilla puffs up and is cooked.
- Transfer the cooked tortillas to a lined tray and cover them to keep them warm.
