INGREDIENTS
- 400g vegetables of your choice
- 500g chicken
- 120g noodles
- Salt
- 1 heaped teaspoon of sugar
- 1 heaped teaspoon of garlic
- 2 chillies
- 4 tablespoons of oil
- 1 tablespoon of oyster sauce
- 2 tablespoons of soy sauce
- Coriander
METHOD
- Boil the noodles according to the package instructions and set them aside. (Kitchen Hack: Place the noodles in a large bowl, cover them with boiling water and a lid. They will be ready to add to the stir fry when needed.)
- Prepare the chicken by washing and slicing it. Add half a teaspoon of bicarbonate of soda (baking soda) to the chicken and set it aside. Rinse the chicken before marinating. (Using baking soda tenderizes the chicken. Rub the baking soda all over the chicken, let it sit, and rinse it off just before cooking.)
- To the rinsed chicken, add sugar, 1 tablespoon of soy sauce, and 1 teaspoon of garlic. Mix well to marinate the chicken.
- Heat 2 tablespoons of oil in a hot wok or deep pan. Add the chicken and cook until it is 3/4 done. Set the cooked chicken aside.
- Clean the wok or pan and add 2 tablespoons of oil, garlic, and chillies. Mix well.
- Add the onions to the wok and cook until translucent.
- Add the vegetables to the onions. Mix well and coat them with the onions, garlic, and chillies. Cook for 5-6 minutes.
- Add 1 tablespoon of soy sauce and oyster sauce to the vegetables. Mix well.
- Add the cooked chicken to the wok.
- Season with salt to taste.
- Add the boiled noodles to the wok and toss everything together.
- Lastly, add coriander and spring onions as optional garnishes.
- Clean up and serve immediately.
