Potato Masala Recipe for Dosa

Here’s a simple and scrumptious Potato Masala recipe that pairs perfectly with dosa, creating a delightful South Indian meal. My uncle shared his simple recipe with just a handful of ingredients and straightforward steps. With his recipe you’ll have a tasty potato masala ready to elevate your dosa experience.

INGREDIENTS

  • 2 teaspoons of oil
  • 1/4 teaspoon urad dal (split black gram)
  • 1/4 teaspoon mustard seeds
  • 1 sprig of curry leaves
  • 1 large Spanish onion, thinly sliced
  • 2 green chilies, split lengthways into quarters
  • A small knob of grated ginger
  • 2 cloves of grated garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin seeds or cumin powder
  • 1 medium tomato, skinned and diced
  • 3 large potatoes, diced and boiled with 1 teaspoon of turmeric and salt
  • 1/2 teaspoon coriander powder
  • 2 knobs of butter
  • 1 tablespoon finely chopped coriander

METHOD

  1. In a pot, heat 2 teaspoons of oil over medium heat. Add urad dal and mustard seeds.
  2. When the mustard seeds start to pop, toss in the curry leaves and sliced onions. Sprinkle with salt.
  3. Once the onions turn translucent, add the grated ginger, garlic, and green chilies.
  4. Stir for a minute before introducing the cumin seeds (or cumin powder). Continue stirring.
  5. Add the diced tomato and cook until it softens.
  6. Pour in a tablespoon of water and then add the boiled potatoes.
  7. Mash the mixture with a masher until well combined.
  8. Finally, add the butter and sprinkle in fresh coriander.
  9. Now, spoon the potato masala directly onto the dosa as it’s done cooking on one side. Close the dosa, and it’s ready to serve.

This has got to be one of the tastiest potato dishes I have tried. It has the most incredible flavours and is absolutely devine.
