Peanut Butter Date Protein Bars

These protein bars remind me of a healthy version of a Snickers bar.

My husband loves protein bars and asked me to make some while we are fasting. These protein bars are made with just a few ingredients, are incredibly easy to make, and can be stored for up to a week in the fridge or frozen for two to three months.

Here is my Peanut Butter Date Protein Bars recipe.

INGREDIENTS

– 1 Heaped cup of oats
– ½ Cup peanut butter (Sugar Free)
– 1 Cup dates (pitted and soaked)
– 25g Protein powder
– ¼ Cup crushed peanuts
– 1 Teaspoon cinnamon
– 50g Dark chocolate

METHOD

  1. Blend the dates and peanut butter until smooth.
  2. In a bowl, combine the oats, protein powder, cinnamon, and crushed peanuts.
  3. Add the date-peanut butter mixture and mix well.
  4. Press a tablespoon of the mixture into a lined cupcake mould, pressing it down with your finger. Dipping your finger in water can help, as the mixture can be sticky.
  5. Top the bars with a teaspoon of melted dark chocolate and some crushed peanuts.

• 6. Refrigerate for 2 hours until firm, and enjoy!
