No-Bake Vegan Berry Cheesecake Recipe

Together, we created this mouthwatering vegan cheesecake that will satisfy your sweet cravings.

INGREDIENTS

Base:

  • 10 Dates
  • 1 cup Almonds (Soaked Overnight)
  • 1/2 cup Coconut Flakes
  • 3 tbsp Peanut Butter

Cheesecake Center Filling:

  • 1/2 cup Peanut Butter
  • 2 tbsp Honey or Syrup
  • 2 tbsp Coconut Butter (Oil)
  • 1 tbsp Cocoa Powder
  • 1 tbsp Water

Cheese Filling:

  • 300g Coconut Milk
  • 200g Frozen Berries of Choice
  • 3 tbsp Syrup
  • 2 cups Cashew Nuts (Soaked Overnight)
  • 2 tsp Agar Agar Powder

On Top of Cheesecake:

  • Vegan Chocolate
  • Berries of Your Choice

METHOD

Cheesecake Center Filling:

  1. Melt coconut butter in a heatproof bowl and set it aside.
  2. In a separate bowl, mix cocoa powder with peanut butter until well combined.
  3. Add honey to the mixture and mix until you achieve a smooth paste.
  4. Pour in the melted coconut butter and continue mixing until smooth. Set aside.

Base:

  1. Place the soaked almonds in a coffee grinder or food processor and pulse until coarse in texture.
  2. Add dates and peanut butter to the ground almonds. Blend until everything is well incorporated.
  3. Transfer the base mixture to the bottom of a greased cake tin and flatten it using your fingers. Refrigerate until ready to assemble.

Cheesecake Filling:

  1. In a food processor, blend soaked cashew nuts until smooth in texture.
  2. Add frozen berries and honey to the cashew mixture and blend until fully incorporated and smooth.
  3. In a saucepan, combine coconut milk and agar agar powder. Mix well and bring it to a boil. Boil for 2 minutes, stirring constantly.
  4. Add the coconut milk mixture to the cashew and berry mixture. Blend until smooth and creamy.
  5. Quickly transfer half of the filling onto the chilled base. Place a chocolate disc from the freezer in the center and cover it with the remaining cheesecake filling.
  6. Place the cheesecake in the freezer, preferably overnight, to set.

Decoration:

  1. Remove the cheesecake from the freezer and decorate the top with an assortment of berries.
  2. Use vegan chocolate to stick the berries onto the cheesecake for added appeal.
