If you’re looking for a quick and easy pasta dish to whip up on those busy days, this Mushroom & Broccoli Pasta is the perfect choice. You can customise it with your favourite veggies, and it’s incredibly simple to prepare.
INGREDIENTS
- 150g of Pasta
- Half a Head of Finely Chopped Broccoli
- 1 Punnet of Mushrooms
- 1/2 Onion
- 1 Red Chilli
- 3 Sprigs of Thyme
- 1 Teaspoon of Crushed Garlic
- 1 Packet of White or Brown Onion Soup
- 1/2 Cup of Milk
- 250ml of Fresh Cream
- 1-2 Ladles of Pasta Water
- Salt to taste
METHOD
1. Start by heating a pot and sautéing onions, garlic, chillies, and thyme.
2. Add in the mushrooms and mix until they are well combined. Cover the pot with a lid and allow it to cook.
3. Once the mushrooms are cooked, add the packet of brown onion soup along with 1/2 a cup of milk. Mix thoroughly.
4. Incorporate fresh cream, pasta water, finely chopped broccoli, and a pinch of salt into the mixture. Stir well and let it simmer on low heat for about 5 minutes.
5. Add the al dente pasta into the sauce. Once it’s well coated, garnish with fresh parsley and serve.
