INGREDIENTS
- 500g Gnocchi
- 200ml Fresh Cream
- 1/2 Cup Pasta Water
- 125g Baby Spinach
- 1/2 Cup Chopped Sundried Tomatoes
- 2 Sprigs Thyme
- 1/2 Onion
- 1/4 Teaspoon Black Pepper
- 2 Green Chillies
- 3 Cloves
- 1/2 Teaspoon Salt
- 1 Teaspoon Honey
- 20g Feta
- Handful of Coriander
- 2 Tablespoons Olive Oil
- Pinch of Salt
METHOD
- Begin by bringing a pot of water to a boil.
- In a mortar and pestle, combine coriander, salt, and a tablespoon of olive oil to create a paste. Add two more tablespoons of olive oil and set aside.
- Cook the gnocchi in the boiling water for a few minutes or until they start to float. Reserve 1/2 cup of pasta water before draining the gnocchi.
- In a separate pan, sauté the onions, garlic, thyme, and green chillies.
- Add the black pepper, sun – dried tomatoes, and 125g of baby spinach. Stir and cover the pan until the spinach wilts.
- Pour in the fresh cream, season with salt, and add a teaspoon of honey to balance the flavors.
