Creamy Gnocchi with Spinach and Sun-dried Tomatoes

INGREDIENTS

  • 500g Gnocchi
  • 200ml Fresh Cream
  • 1/2 Cup Pasta Water
  • 125g Baby Spinach
  • 1/2 Cup Chopped Sundried Tomatoes
  • 2 Sprigs Thyme
  • 1/2 Onion
  • 1/4 Teaspoon Black Pepper
  • 2 Green Chillies
  • 3 Cloves
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Honey
  • 20g Feta
  • Handful of Coriander
  • 2 Tablespoons Olive Oil
  • Pinch of Salt

METHOD

  1. Begin by bringing a pot of water to a boil.
  2. In a mortar and pestle, combine coriander, salt, and a tablespoon of olive oil to create a paste. Add two more tablespoons of olive oil and set aside.
  3. Cook the gnocchi in the boiling water for a few minutes or until they start to float. Reserve 1/2 cup of pasta water before draining the gnocchi.
  4. In a separate pan, sauté the onions, garlic, thyme, and green chillies.
  5. Add the black pepper, sun – dried tomatoes, and 125g of baby spinach. Stir and cover the pan until the spinach wilts.
  6. Pour in the fresh cream, season with salt, and add a teaspoon of honey to balance the flavors.
  7. Add the cooked gnocchi to the creamy sauce, ensuring they are well coated.
  8. Finish by topping the pasta with crumbled feta and the prepared coriander oil.
