Coconut Ice Recipe

Coconut Ice, also known as Coconut Pak, is a delightful treat with its distinct pink and white layers.

Although it may look different, I assure you that this recipe yields the same mouthwatering results.

This Coconut Ice recipe is soft, fudgy, and incredibly easy to mold. It’s the perfect addition to your Diwali parcel, bringing a touch of sweetness and joy to the festivities.

INGREDIENTS

  • 1 x 390g Condensed Milk
  • 500g Icing Sugar
  • 400g Desiccated Coconut
  • 5ml Vanilla Essence
  • 2.5ml Rose Essence
  • 1/4 Teaspoon Ground Elachi
  • Few drops of food coloring

METHOD

  1. In a mixing bowl, combine all the ingredients except the food coloring.
  2. Mix the ingredients together until the mixture becomes very stiff.
  3. For the traditional pink and white Coconut Ice, divide the mixture into two batches. Add a few drops of pink food colouring and rose essence to one batch and mix well.
  4. Grease a dish and layer the white batch at the bottom, followed by the pink batch on top.
  5. Allow the mixture to set in the fridge.
  6. Once set, cut the Coconut Ice into squares or use a mould cutter.
