Chickpeas On Toast

This vegetarian high-protein snack is so easy to whip up and can be customised with your favourite veggies and condiments.

It can be served as a dip, or in a wrap, or on toast.

INGREDIENTS

– 1 tin chickpeas (400g)
– 1/4 cup diced red onion
– 1/4 cup parsley
– 1/4 cup diced tomato
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 1/2 teaspoon za’atar
– Balsamic glaze
– Juice from 1/4 lemon
– 1 tablespoon mayo
– 1 tablespoon plain yoghurt
– 1 tablespoon dhania chutney
– Serve on toast
– Chilli flakes

METHOD

  1. Smash the chickpeas with a fork until partially coarse.
  2. Add diced red onion, parsley, and tomato.
  3. Mix in the yoghurt, mayo, and dhania chutney.
  4. Add za’atar, salt, and pepper, and stir to combine.
  5. Butter a slice of toast.
  6. Spread the chickpea mixture on top of the toast.
  7. Sprinkle with chilli flakes.
  8. Drizzle with balsamic glaze.
