This vegetarian high-protein snack is so easy to whip up and can be customised with your favourite veggies and condiments.
It can be served as a dip, or in a wrap, or on toast.
INGREDIENTS
– 1 tin chickpeas (400g)
– 1/4 cup diced red onion
– 1/4 cup parsley
– 1/4 cup diced tomato
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 1/2 teaspoon za’atar
– Balsamic glaze
– Juice from 1/4 lemon
– 1 tablespoon mayo
– 1 tablespoon plain yoghurt
– 1 tablespoon dhania chutney
– Serve on toast
– Chilli flakes
METHOD
- Smash the chickpeas with a fork until partially coarse.
- Add diced red onion, parsley, and tomato.
- Mix in the yoghurt, mayo, and dhania chutney.
- Add za’atar, salt, and pepper, and stir to combine.
- Butter a slice of toast.
- Spread the chickpea mixture on top of the toast.
- Sprinkle with chilli flakes.
- Drizzle with balsamic glaze.
