Without fail, I cook up a big pot, whether we’re fighting off a cold, or simply craving something cozy and wholesome. It’s a recipe I come back to over and over, and I know once you try it, it’ll be added to your own recipe repertoire too.Chicken Cuts That Work BestI prefer using boneless chicken thighs. They cook quickly, stay juicy, and carry a lot of flavour. You can also use skinless bone-in chicken pieces if that’s what you have just shred the meat once cooked. Diced chicken fillets also work if you're after a leaner option.
Ingredients
- 500 g boneless chicken thighs
- 1 large potato grated
- 2 carrots grated
- 1/2 onion diced
- A handful of fresh parsley chopped
- 1 litre chicken stock or 1 packet Knorr Chicken Noodle Soup
- 1 litre hot water
- 1 tsp salt
- 1/2 tsp coarse black pepper
- 1/2 tsp turmeric
- 1 tsp ginger-garlic paste
- 1 tsp crushed garlic
- 1 tsp cumin seeds
- 1 tbsp fresh thyme
- 1 2 green chillies adjust to taste
Instructions
- In a heated pot, add your oil of choice and the chicken thighs. Season the chicken with salt, pepper, turmeric, ginger-garlic paste, crushed garlic, cumin seeds, thyme, and sliced green chillies.
- Let the chicken brown slightly, then add the diced onion, grated carrots, and grated potato. Stir everything together to combine.
- Add 1 cup of boiling water, cover the pot, and let it simmer for 10 minutes.
- Add your chicken stock (or if using the Knorr Chicken Noodle Soup, dissolve it in 800 ml hot water first). Pour into the pot along with the chopped parsley.
- Let the soup simmer gently for another 10–12 minutes, allowing the flavours to deepen and everything to cook through.
- Serve hot in a big bowl. Sprinkle with extra black pepper and parsley, and enjoy every comforting spoonful!
