  • 1 tin 400ml coconut milk
  • Sesame seeds
  • Ripe mangoes

  • Cook the Rice: Rinse the rice thoroughly until the water runs clear. Cook in a pot of boiling water until almost tender, but still slightly firm. Drain well.
  • Make the Coconut Milk Mixture: In a saucepan, combine the coconut milk, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  • Combine Rice and Coconut Milk: Pour the coconut milk mixture over the cooked rice, stirring to coat. Let it sit for a few minutes to absorb the liquid.
  • Thicken the Sauce: In a small bowl, whisk together 1 tablespoon of the coconut milk mixture with 1/2 teaspoon cornstarch. Pour this mixture back into the saucepan with the remaining coconut milk and rice. Bring to a simmer, stirring constantly, until the sauce thickens.
  • Assemble and Serve: Divide the sticky rice among small bowls. Top with fresh, sliced mangoes. Drizzle with the thickened coconut milk sauce and sprinkle with sesame seeds.
