  • 1 Tablespoon Ginger
  • 1 Tablespoon Garlic
  • 1/4 Teaspoon Chili Flakes
  • 1/2 Teaspoon Sesame Seeds
  • 1 Teaspoon Chili Bean Paste
  • Handful of Spring Onions
  • 1 Tablespoon Soy Sauce
  • 3 Tablespoons Oyster Sauce
  • 1 Pack Udon Noodles
  • Assorted Vegetables of Your Choice (I used):
    • Spinach
    • Mushrooms
    • Tofu

Method:

  1. Start by preparing the aromatics. Finely chop the ginger and garlic, and set them aside. Also, prepare the sesame seeds for garnishing.
  2. In a large pan or wok, heat some oil over medium heat. Add the chopped ginger, garlic, and a dash of chili flakes to infuse the oil with incredible flavors.
  3. Stir in the chili bean paste for a spicy kick, followed by the spring onions to add freshness and a delightful crunch.
  4. Add your choice of assorted vegetables, such as spinach, mushrooms, and tofu. Stir-fry them until they are cooked to perfection, creating a colorful and nutritious base for your Udon noodles.
  5. While the vegetables are cooking, prepare the sauce by combining soy sauce and oyster sauce in a small bowl. Mix well to ensure all the flavors meld together harmoniously.
