VEGAN ALTERNATIVE TO SCRAMBLED EGGS

INGREDIENTS
- 350g Tofu
- 1/4 Onion, chopped
- 1/2 tsp Red Chillies
- 1 tbsp Coriander (Spring Onions, Chives, or Parsley can be used as alternatives)
- 1/4 tsp Turmeric
- 1/2 tsp Aromat or Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Garam Masala
METHOD
- Begin by removing moisture from the tofu using a paper towel or napkin.
- Break up the tofu into small pieces using a fork, ensuring not to make them too fine as they may break during cooking.
- Heat some oil in a pan. Olive oil works well for this recipe.
- Add the chopped onions to the pan and cook for 2 minutes until they become translucent.
- Stir in the red chillies and turmeric, combining them with the onions. Cook for an additional 2 minutes over medium heat.
- Add the tofu to the pan and mix gently until well combined.
- Sprinkle in the black pepper, garam masala, aromat or salt, and half of the coriander. Mix well and cook for 2-3 minutes, stirring occasionally.
- Sprinkle the remaining coriander on top and serve
