INGREDIENTS

  • 2 Large Potatoes
  • 1 cup Broccoli
  • 1 cup Leeks
  • 2 Cloves of Garlic, sliced
  • 1/2 tsp Black Pepper
  • 1 tsp Chilli Flakes
  • 1 tsp Chives
  • 3 Tbsp Butter
  • 1/2 cup Cream

METHOD

  2. Sauté the leeks, garlic, and chilli flakes in the melted butter, allowing the aromas to develop and mingle.
  3. Add in the broccoli, black pepper, and potatoes. Ensure the potatoes are slightly browned for added depth of flavor.
  4. Pour in 1 litre of stock or boiling water (water can be used as an alternative). Bring the mixture to a boil and let it simmer for 10 minutes.
  5. Transfer the soup to a blender and puree until smooth.
  6. Return the blended soup to the pot and bring it back to a gentle boil.
  7. Stir in the cream and season to taste with additional salt and pepper if needed.
