Egg Fried Vegetable Rice

Transform those miscellaneous veggies lingering in your refrigerator into a mouthwatering dish of Egg Fried Vegetable Rice. This recipe is a fantastic way to utilise leftover rice, soy sauce, oyster sauce, and of course, those vibrant veggies.

For an extra kick of flavour, feel free to enhance the dish with spring onions, coriander, and chilies as delightful condiments.

INGREDIENTS I USED

I utilised half an onion, a few garlic cloves, one carrot, half a cucumber diced, and 1 cup of broccoli as my vegetable medley.

METHOD

To prepare, start by stir-frying the vegetables on medium to high heat. Once done, set them aside and fry the eggs separately.

Incorporate the cold leftover rice into the pan, ensuring it mixes well with the eggs.

Add a generous amount of oyster sauce and soy sauce to infuse the dish with delightful flavours.

Finally, garnish your creation with fragrant coriander and spring onions, providing the perfect finishing touch. 🤌🏽👌🏽
