METHOD

  1. If using Woolworths Exotic mushrooms, tear them up using your hands. Otherwise, slice your preferred choice and set aside.
  2. In a deep pan, add olive oil, garlic, thyme, rosemary, onions, and chili flakes. Mix well to infuse the flavors.
  3. Add the mushrooms to the pan and cook until they release their liquid. Season with salt and pepper for enhanced taste.
  4. Introduce the risotto rice and allow it to absorb the flavors of the mushrooms and spices. Mix well to ensure even distribution.
  5. Gradually add vegetable stock, one ladleful at a time. The risotto will eagerly soak up the liquid, becoming creamier with each addition.
  6. Continue this process until the rice reaches your desired level of tenderness. You’ll notice the rice swelling and the risotto turning luxuriously creamy.
  7. Just before the rice is perfectly cooked, add the parsley and Parmesan cheese. Stir them in to enrich the flavors and achieve a luscious texture.
