The simplest and most mouthwatering creamy pasta recipe that will have you hooked. In just 15 minutes, you can whip up this tasty dish. The sauce is a heavenly blend of garlic, chilli, cheese, and cream that promises to leave you awe-inspired. It is probably also one of my favourite home made pasta dishes.
Ingredients (Serves 2):
- 150g Pasta
- 30g Butter
- 3 Cloves of Garlic
- 1 Red Chili
- 300g Blue Cheese
- 1 Heaped Tbsp Parmigiano Reggiano
- 250ml Cream
- Fresh Parsley
- 50ml Pasta Water
Method:
- Start by melting the butter in a pan and adding the garlic and chili. Cook them over medium-low heat for about 5 minutes, allowing the flavors to infuse.
- Pour in 200ml of cream, reserving 50ml for later use.
- Introduce the blue cheese into the creamy sauce and stir until the cheese melts and blends beautifully. Season with freshly ground black pepper.
- Incorporate the pasta water and a generous amount of chopped parsley into the sauce, ensuring all ingredients are well mixed.
- Once the sauce is well-formed, add the al dente pasta and gently coat it with the creamy goodness.
- For an extra touch of indulgence, pour in the remaining cream and sprinkle Parmigiano Reggiano over the pasta, ensuring every strand is covered.
- Serve this delightful dish garnished with fresh parsley and an extra sprinkle of Parmigiano Reggiano.
